Sunday Breakfast 2/21

Breakfast:
Stuffed French toast.
2 slices of 45 cal Sara Lee bread(1pt),
1 table spoon fat free cream cheese(0pt),
4 berries from my bag of frozen berries(0pt),
3 table spoons of regular eggbeaters(1pt)....spread cream cheese on 1 slice of bread, squish the fruit and put on cream cheese.
Put 2nd slice on top, dip in egg... or spread egg on both sides and cook in skillet/pan for a couple minutes each side. Drizzle on bout 2 table spoons light or sugar free syrup.

2/13/10

What a crap night last night was. I love working in hotel, and only work there 2 nights a week, but when Ive gotta deal with sports teams, i want to scream. The kids are so rude, and the parents are even worse.

So im officially sick...It takes a lot for me to admit when im sick. I hate it. I get whiney, and bitchy..im always achey and cold. So i trudged to walmart this evening for my Robitussin Cough and chest congestion, and some Alka-Seltzer plus cold caplets. Hoping they help.

I did go to the gym for 2hrs. I normally only go 1hour a day on sat. and Sun. But I slept instead today, and went for 2hrs tonight. Im not going tomorrow. Going to come right home after work and SLEEP.

I am making soup tomorrow. Its a lot like the Zero PT WW soup, but it'll have barley, and a TON of veggies. Carrots, Celery, Rutabagas,Potatoes, Cauli flower, brocolli, and green beans. Im using a chicken broth, and will cook it in my crock pot for a few hours. Then I'll add in some barley(the way my gramma makes her chicken soups). It'll be soo good for my cold.

TGIF!!

Well its Friday. I love Fridays...Yes i work 2 jobs, so no rest for the wicked....But Friday is the 1 day i allow myself off from the gym. I get paid every friday(from 1 job or the other). So i get the bills paid, shopping done, and basically relax.

Im making kind of an odd Breakfast. Im not a run of the mill cereal person for the most part.
This morning i decided I wanted a pizza for breakfast. Only Mines soo healthy.

I took a half a pizza crust from the fridge(I do buy them premade).
Rolled it super thin(always looks like more) and baked it for 13 minutes
Then i topped it with 2 table spoons spaghetti sauce
Sliced mushrooms, spinach, sliced tomatoes, thin sliced turkey, and mozerella cheese.
Baked it at the 350 for bout 10 minutes or until everything was melted and warm.

Seriously this is a 3 pt pizza, of course unless you use extra cheese,w hich you can. You'll feel like your cheating, its sooo good. Would also be great for lunch, or even a light dinner. :)


Ingredients needed:

1/2 a Pie crust(I used Pillsbury premade) rolled thin on a cookie sheet 0pts
diced mushrooms 0pts
Diced tomatoes 0pts
1/4 cup of spinach(dont forget to squeeze out the excess water)I used frozen and warmed it up. 0pts
5 slices of thin/shaved turkey 1pt
2 tablespoons spaghetti sauce 0pt
mozrella cheese 1-2 pts depending on how much ya want to use.

Such a good breakfast.
Optional add ins or trade offs.
Instead of tomato use a diced hardboiled egg
use Sundried tomato pesto instead of spaghetti sauce
amp it up with some chili powder, chilies or bbq sauce
Warm some mixed veggies in the microwave and use instead of spinach

My dinner 2/11/10

I believe in real food. Im not a fan of prepackaged dinners, or premade foods. So I tend to create my own meals, and my own snacks.

Dinner tonight, was a first. Im a big fan of chicken. There are sooo many ways to make it that can be very good for you. A 3oz chicken breast is 3 pts.
Now 3 oz is a lot of meat. I figure a 4oz breast is bout 4pts. I buy the boneless skinless kind, and theres no fat on them.

I simply set the oven at 350 degrees
I had a packet of parmesean shake and bake. Put a bit of that in a bowl.
Cut a breast into strips( got bout 5-6 strips) and mix in the bowl of shake n bake. I laid them on a cookie sheet, sprayed with a bit of pam and baked them for 20 minutes.

While the oven was still hot, i washed and sliced a sweet potato into steak size fries, put them on another cookie sheet and baked them for 25-30 minutes. A sprinkle of salt and they are perfect. A 7oz sweet potato is 3pts.

Ingrediants needed for this meal

3-4 oz boneless skinless chicken breast
Packet of shake and bake or finely crushed seasoned crumbs
7oz sweet potato
Dash of salt.

I cook for 1 Since I am single and live pretty much alone. These recipes are for 1 person. The pts for this emal is 6-7pts.

New at this Blogging thing

This is my very first blog. My attempt at journaling my journey and sharing my recipes.
Im not one to buy premade foods. I love to cook. Ive also, since joining the weight watchers program have learned to cook healthier.
I love sharing. So i do hope anyone who joins and reads my blog, enjoys my recipes, and silly antics as we go thru this journey of a new lifestyle.
